Dec. 16, 2010 With all of the holidays coming and going it's kind of hard to actually consider what should go in to my column. I was thinking fo product reviews, but then I thought nah. Everyone really has what they like as far as equipment. And in keeping with the "relive the 1930s depression" I thought frugality would be better. Then people began asking me for low calorie recipes, low carb recipes and I thought... do I do calorie counting, nah forget that. Too many calories is in the really good food. Do I do carb counting? Well that’s a bit easier, but still it seems like bad idea when everyone is enjoying food. After all who really wants t be reminded about cholesterol. Carbs, calories, sodium etc. How about coming up with some great new recipes for even the lonely college student, person away from home that they can make without a problem. Yes that’s it! Simple to make non-complicated home food that doesn’t take a complete Master Chef kitchen to complete. First let me say that there are a few pieces of equipment that you will need. A small crock-pot and smallish microwave. Both can be gotten at a Goodwill or thrift store in working condition. They may need to be cleaned up a bit for your own satisfaction. But all in all the few dollars will make wonderful meals that don’t require a big mess. I begin with a simple appetizer. Remember this is all low carb more or less and all ingredients are Kosher too. If you are planing on eating milk and meat together please wait the proper 15 minutes between courses/foods. However because I use l many product that are low fat, they are often dairy free. Adjust to suit your own diet. I have made everything here low-calorie, low-carb, fat free and glatt kosher too so substituting as you need doesn’t change the taste at all. It’s a fondue for the fondu-less. Just open a jar of Cheeze-whiz or use the vegetarian extra sharp cheddar cheese product. Add some spices and zap. You can dip fruit slices, bread chunks like croutons, or even turn it into nachos by adding chunky salsa. To serve with the appetizer how about non alcoholic spritzers. They are tasty, safe, bubbly and fun. 1 bottle ginger ale of choice and add to each glass three maraschino cherries and 1 tablespoon of the cherry juice, add ice cubes and stir. It’s reminiscent of Asti or Brute. You can also add 1 sugar cube to the bottom of the extra dry ginger ale in a champagne flute for alcohol-less toasting. For a main course, which is a stew, hot and hearty. Take 1 can French onion soup, ½ pound pack lean stew beef (If making vegetarian leave "beef chunks" for last) ½ sweet onion, 1 bulb crushed garlic. 10 small baby carrots, 1 tablespoons Worcestershire sauce, 1 tablespoon ketchup 1 small can whole potatoes washed and drained ½ cup frozen peas or corn or both. Yes you can use the frozen peas and carrots blend too. After all has been placed in crock, plug it up and cover tightly and let it cook all day. If making the vegetarian option style, you can purchase seitan beef chunks at the health food supermarket. It warms through and toughens up and become just like stew beef! Zap some French bread with butter/margarine and garlic spread To make kosher garlic spread Take margarine about ¼ cup and just warm it so its soft. Add to that ½ teaspoon garlic powder, A sprinkle of dried parsley flakes Mix the ingredients well. Spread on pre made toast slices and zap to have the flavored infused. You can also toast bread in the toaster, spread the mixture and retoast. Desserts are always hard but here is one that just takes five minutes to make! This is the recipe that I actually posted at Mahalo in answer to a dessert question. 1 jar/can Escalloped apples. You can substitute canned apple pie filling in a pinch ½ teaspoon apple pie spice or plain cinnamon if you have it 1 stick Butter or margarine: good quality margarine please. Butter spray 4 slices Extra sharp cheddar cheese slices in either standard or vegetarian ½ cup crushed real vanilla wafers or graham crackers Ice cream or real whipped cream or heavy cream Spray and drop by the teaspoon, ½ of the stick of butter in bottom of casseroles sprinkle cookies or crackers on the bottom. Mix the spice through the apple mixture. Spread apples all over the bottom and drop the remaining ½ stick of butter/margarine by teaspoonful all over the top. Heat in microwave or oven until apples get heated through. Lay cheese to cover and make a crust over apples. Bake again until it begins to really begins to melt and gets slightly bubbly. Remove from oven and top with heavy vanilla ice cream or the whipped cream or a small stream of heavy cream. The sweet and salt together work really well together. This can be cooked up in a dorm room with no problem, in a hotel room that has cooking allowed or even in a small office. There is no reason not to have at least one good home cooked meal without the major mess and be the envy of the others.
