Masud’s Tofu Surprise!

My son, Masud, has been a vegetarian for most of his adult life.  He often experiments with different ways to cook tofu to add variety and flavor to his diet.  Two years ago, he created this dish, which to his surprise, has now become a staple in our home.  It can be served over brown rice or whole grain pasta, depending on your dietary needs, preferences, and/or restrictions.  You can also just serve it as is or with steamed vegetables.  This is a perfect dish to serve during the summer.  I recommend a Pinot Grigio wine to accompany its delicate aromatic flavor if you wish to serve wine with the meal.

Ingredients for Masud’s Tofu Surprise:

1 package of extra firm tofu cut into one to two inch cubes (You can purchase this from most supermarkets and health food stores.  You need to use the extra firm kind of tofu because the softer kind will crumble.)

8 ounces of white cooking wine
8 to 12 ounces of water
(depending on how much “broth” you desire for your noodles, vegetables, or rice)
1 teaspoon of dried dill
3 cloves of garlic, finely chopped
1/2 teaspoon of pepper
2 tablespoons of canola oil
(or you may use a non-stick spray with your non-stick skillet)
1 cup of spring peas
Salt as desired
(not much is needed since cooking wines are often salty in flavor)
2 tablespoons of Romano cheese

Directions:

Heat the oil in the skillet.  After hearing it crackle a bit, add the garlic.  Let it brown for a minute.

Now add the tofu.  Let it brown slightly on both sides and reduce heat.  Add the wine and water.  Sprinkle the dill, pepper, and salt—if desired.

After five minutes, add the spring peas.  Cover and continue to simmer on low heat for 15 minutes.

This dish serves two to three people, depending on the size of each portion served.  If serving more, simply multiply the ingredients, knowing that each time you do, you will be adding three dishes to the count.
